Heavy D Nachos
The perfect fade, the perfect snack
We’ve lost a lot of great performers this year and everyone at Swellco & Swellco have all been pretty broken up over the holiday with the news of Heavy D’s “natural” passing. For those of you unfamiliar with Heavy D, his contribution was huge in hip hop. Heavy D was one of the early pioneers in the genre of Fat Guy Rap. He also began the 80′s trend of using the letter D in his name, breaking ground for rappers like Chuck D, Schoolly D and thousands more. But most importantly, he was a true master of the bright colored suit.
Heavy D’s other achievements included a short lived sitcom on Fox entitled Get a Fade, Sucka and was a regular on In Living Color for five seasons. He bounced back after his disastrous attempted reinvention as Skinny D by releasing two cook books and involving himself with endangered exotic bird fundraising.
As homage to this brilliant hip hop legend we are presenting a nacho recipe from his book Never Wack with Heavy D’s Snacks. We ask that you make it in his honor this New Years Eve.
Heavy D’s Nacho Supreme
1 (8 oz.) bag tortilla chips
1 lb. ground beef
1 lb. boneless chicken breast
1 lb. ground pork
1 pkg. taco seasoning mix
1 sm. onion, chopped
1 green pepper, chopped
1 med. tomato, chopped
1 (8 oz.) pkg. mild cheddar cheese, shredded
1 (8 oz.) pkg. sharp cheddar cheese, shredded
1 (8 oz.) pkg. Monterey jack cheese, shredded
1 (12 oz.) can refried pinto beans
1 (12 oz.) can refried black beans
1 (4 oz.) can sliced black olives
1 (8 oz.) jar mild salsa
1 gallon sour cream
Preheat oven to 350 degrees. Brown ground beef, chicken breast, ground pork and onion. Drain fat into bowl and set aside. Stir in taco seasoning and 1/2 cup water. Bring to boil; reduce heat and simmer for 10 minutes. Chop up chicken breast. Place tortilla chips in 9×13 pan, top with ground beef, ground pork, chicken breast, green pepper, tomatoes, refried beans, olives and cheeses. Drizzle salsa and meat fat over all. Bake uncovered for 10 to 15 minutes. Serve warm with sour cream.
